			<content:encoded><![CDATA[<p>Neil and I decided (very) last minute that we would partake in the <em><a href="v">Pete&#8217;s Greens CSA</a></em> again this summer since we love their produce.  Last week was the first pick up because we were away we ended up giving away most of it except the potatoes and garlic scapes that we had for our camping breakfast. This week we received:</p>
<ul>
<li>Bag of Mesclun Greens</li>
<li>Beet Greens</li>
<li>Napa Cabbage</li>
<li>Sweet Salad Turnips</li>
<li>Garlic Scapes</li>
<li>Scallions</li>
<li>Zucchini</li>
<li>Easter Egg Radishes</li>
<li>Sage</li>
<li>Potatoes</li>
</ul>
<p>Tonight is the first of many meals using these amazing organic and local ingredients. Enjoy- I know we did!</p>

Garlic Scape Pesto Pasta with Zucchini</h2>
<p>Yields 4 servings</p>
<p>Takes about 30 minutes total to make</p>
<p><strong>Ingredients:</strong></p>
<ul>
<li><strong>Garlic Scape Pesto</strong>
<ul>
<li>1 cup raw walnut pieces</li>
<li>1 bunch of garlic scapes (about 1 to 3/4 cup), chopped</li>
<li>4 cups basil leaves</li>
<li>2/3 cup olive oil</li>
<li>1t salt</li>
<li>1T sesame seeds</li>
<li>2T nutritional yeast</li>
</ul>
</li>
</ul>
<p>Place the walnuts and garlic scapes in the bowl of a food processor and process until small crumble. Add in the basil leaves, turn the processor on low and slowly stream in the olive oil through the feed tube. Add in the salt, sesame seeds and nutritional yeast; process to combine.</p>
<ul>
<li><strong>Sauteed Zucchini</strong>
<ul>
<li>2 medium zucchini, sliced into half moons</li>
<li>Cooking Spray</li>
<li>1/2t salt</li>
<li>1/4t black pepper</li>
<li>1/2t garlic powder</li>
<li>1t nutritional yeast</li>
</ul>
</li>
</ul>
<p>Heat a large saute pan over medium-high heat.  Spray with cooking spray and toss in the zucchini and saute for 3-4 minutes just until they start to lightly brown.  Stir in the salt, pepper, garlic powder and nutritional yeast; cook for 2 more minutes.</p>
<ul>
<li><strong>4 servings of pasta of your choice</strong></li>
</ul>
<p>In a large bowl toss the pasta, zucchini and 1/4 to 1/3 of the pesto together.  Serve warm, room temp or cold!</p>
<p>The pesto makes a lot more than you need for this dish so place any extra in a jar top with a layer of olive oil and seal tightly.  Store in the freezer until you need it again.  To defrost move from the freezer to the fridge 8 hours before using.</p>
<p>For dessert we shared one of these wonderful vegan, raw, gluten free tarts from <a href="http://www.hailmerry.com/shop/category/HM-CHOCOLATES/products">Hail Merry</a>.</p>

<p>While quinoa is widely considered a grain, it’s actually the seed of a plant called Chenopodium or Goosefoot, related to chard and spinach. Quinoa is a gluten-free grain and has a similar effect as other whole grains in helping to stabilize blood sugar.</p>
<p>It has a waxy protective coating called saponin which can leave a bitter taste. For best results, rinse quinoa before you cook it or even soak it for a few hours or overnight. When cooked, it has a fluffy, slightly crunchy texture. Try it in soups, salads, as a breakfast porridge or as its own side dish.</p>
<p>For quinoa, and whole grains in general, the majority of digestion occurs in the mouth through chewing and exposure to saliva. For optimal nutrition and assimilation, it is vital to chew your grains well and with awareness. A great meditation is to find a calm place, without distractions, to sit down for your meal. Make it a habit to chew each bite 20 times or more. See how this simple practice can help your digestion and overall focus for the rest of your day.</p>

<p><strong>Recipe of the Month: Quinoa Pilaf</strong></p>
<ul>
<li>Prep Time: 3 minutes</li>
<li>Cooking Time: 30-40 minutes</li>
<li>Yield: 4 servings</li>
</ul>
<p><strong>Ingredients</strong>:</p>
<ul>
<li>1 cup quinoa</li>
<li>2 1/4 cups water or stock</li>
<li>1/2 cup dried cranberries</li>
<li>1/2 cup walnut pieces</li>
<li>1/4 cup chopped fresh parsley</li>
<li>pinch of salt</li>
</ul>
<p><strong>Directions</strong>:</p>
<ol>
<li>Rinse quinoa in fine mesh strainer until water runs clear.</li>
<li>Boil the water and add quinoa and salt, cover and reduce heat.</li>
<li>After 15 minutes add cranberries and walnuts to top; do not stir.</li>
<li>Cook 5 minutes more, until all the liquid is absorbed.</li>
<li>Remove from heat, add parsley and fluff with fork, cover and let sit for 3-5 minutes and serve.</li>

<p><a href="http://www.premierorganics.org/">Artisana Raw Organic Nut Butters</a> sent me some teasers of their amazing raw nut butters. These cute little jars had one serving of nut butter in them just enough to get a taste and leave you wanting more. These handmade and raw gourmet nut butters are a great treat. Although they are expensive they are amazing and worth the money as an occasional treat. My absolute favorite of all the samples was the cashew butter; it was amazingly creamy, silky and smooth.  The cashew butter was closely followed by the luscious macadamia cashew butter.  Of course all the others were tasty too.</p>

<p>I recently posted a review for <a href="http://cookingforaveganlover.wordpress.com/2010/02/18/crazy-rumors/">Crazy Rumors</a> vegan lip balm.  I have found another great vegan lip balm, HURRAW! a great all natural, vegan  and made from premium raw and fair trade ingredients.  One thing that I love about this lip balm is the shape, it&#8217;s oval versus round which helps to coat the lips better.  I loved the Cinnamon Tinted Lip Balm; it was a great flavor and gave my lips a nice pink tint. My hubby loved the Vanilla Bean Lip Balm and he was also a big fan of this stuff. It&#8217;s great to find not only a vegan but also raw lip balm. I would definitely recommend these to any raw foodist or vegan looking for a new lip balm.</p>

							Oooh, I love that it's "not sticky" (as its ad says). I love Merry Hempsters, but it gets sticky when it gets old. And often, my Whole Foods sells the old stuff. I've returned so many tubes!

<p>Ingredients:</p>
<ul>
<li>2 cups quinoa, sprouted 24 hours, rinsed and drained</li>
<li>1/2 cup flax meal</li>
<li>1 cup sunflower seeds</li>
<li>1/2 cup parsley</li>
<li>1 clove garlic</li>
<li>3 green onions, chopped</li>
<li>1/2 red bell pepper, chopped</li>
<li>10 sundried tomatoes, soaked for 1-2 hours</li>
<li>2T Nama Shoyu</li>
<li>1/4 Cup cold pressed extra virgin olive oil</li>
<li>1t italian seasoning</li>
<li>2T nutritional yeast (optional, not raw but adds great flavor)</li>
</ul>
<p>Directions:</p>
<ol>
<li>To a food processor add sunflower seeds through italian seasoning and blend until almost smooth.</li>
<li>In a medium bowl mix together the quinoa, flax meal, nutritional yeast (if using) and sunflower seed mixture and mix until everything is evenly mixed together.</li>
<li>Spread thinly onto teflex sheets, parchment paper or fruit roll sheets (I use fruit roll sheets for my Nesco dehydrator).  At this point you can score the mixture to have even crackers or you can just break into pieces once they are done.</li>
<li>Dehydrate at 115F for 2 hours then turn down to 105F for 10-15 hours (I like to do this in the evening and let them dehydrate over night.</li>

							I'm gonna HAVE to try these! Since I've gotten my dehydrator, I like to keep flax crackers on hand because they're so damn delicious! And I love the idea of using sprouted quinoa in them.

							i would say that you could easily! just spread on a parchment lined sheet pan and bake on low heat- and check every hour for the first 2 and if if needs longer every 30min after that

							I love the filling on these...and I have been trying to find spring roll wrappers for thai (raw vegan) spring rolls and have been to my groc, TJs, and my WFs and all they have is nori or wonton wrappers.. need to go to an asian market...and I may put your filing in a srping roll wrapper. I am not really a nori girl, unfort.

			<content:encoded><![CDATA[<p>We had originally intended on having dinner at Pure Food and Wine for our Valentine&#8217;s Day dinner but after some time to think it over we decided that it&#8217;s a little too pricey for our budget right now.  We were however on a mission to make our way to One Lucky Duck at the<a href="www.chelseamarket.com"> Chelsea Market . </a>When I saw the Mallomar waiting in the cooler I made a bee-line to it. My husband also picked up one of their Valentine Truffles for me, it was good but not really worth the $3 for the tiny treat.  However the $6 Mallomar was amazing and wish we had both got our own because it was that good.</p>

			<content:encoded><![CDATA[<p>In the past 2 years I have really gotten into the raw foods diet and although I do not practice it as much in the winter I still try to get in at least one raw meal a day (we live in VT and produce is not so great in the winter).  Somedays this means just keeping it simple and having a green smoothie usually for breakfast, sometimes at lunch.  The recipe book  <em><a href="http://www.greensmoothierevolution.com/">Green Smoothie Revolution </a></em><a href="http://www.greensmoothierevolution.com/">by Victoria Boutenko</a> has been a great resource for making some delicious green smoothies as well as providing a ton of information about green smoothies in sections such as The Importance of Rotating Greens in Your Smoothies and Food Combining in Green Smoothies. </p>

<p>So far I have been mostly playing around with recipes from Green Smoothies for Beginners, Supergreen Smoothies and Green Smoothies for Children however I am interested in trying some green soups and puddings soon.  The great part about this book is the variety of recipes there are, 200 to be precise, that are all fun and different.   The recipes use a variety of greens to keep things interesting as well as a number of great fruit and veggie combinations.  My favorites (so far) have been the Medallion Melon which is simple cantaloupe and romaine- simple and delicious.  However, my absolute favorite and so far go to smoothie has been the Winter Green Smoothie which is berries, spinach, water and ginger- soooo good.  </p>
<p>Over all this is a great book for those interested in raw foods, green smoothies and healthy new ways to get greens into ones diet. </p>

							I've never heard of this book, but I NEED IT! I get stuck in ruts with green smoothies and often use the same ingredients over and over. 200 green smoothies recipes would be awesome. I'll have to look for this. I love smoothies as pre-workout snacks.

<p>This summer, Lindsay and I made an effort to eat a high raw diet.  Part of the fun was experiencing different raw products.  From raw cookies to raw crackers and raw nut mixes, there was so many different things to try.</p>
<p>Kathy&#8217;s Krackers are a healthy snack made of flaxseed and are raw and gluten free as well.</p>
<p>Kathy&#8217;s Kracker&#8217;s was kind enough to send us a sample of all three of the flavours they offer:</p>
<ul>
<li>Salsa &#8211; The salsa crakers were my favourite by far.  They captured the typical flavours of salsa perfectly.  They had a very good spice level as well.  They were spicy, but not unbearable by any means. We ate them plain, but website suggests adding avocado and other vegetables and I think this would compliment the flavours found in the cracker perfectly, I wish I had thought of that!</li>
<li>Savoury &#8211; These crackers are flavoured with bell pepper, tomatoes and garlic and have a very well balanced taste.  I enjoyed these quite a bit.  We ate these on their own, but I imagine they would be very good with hummus or a raw dip.</li>
<li>Apple &amp; Cinnamon &#8211; If you are looking for a sweet snack, this is a great choice.  They are sweetened with Stevia and have a very natural apple taste.  It&#8217;s refreshing to have something that&#8217;s supposed to be apple flavoured that isn&#8217;t overly tart or artificial tasting.  I think these would be a hit in school lunches as well.</li>
</ul>
<p>These are a great snack for when you are on the go or when you are looking to build a more complete snack (as in the avacado and vegetables combo with the salsa crackers) as well.  I would definitely recommend picking up a pack if you can!</p>

							Hmmm.... I've never tried these crackers. They sound yummy! I have been wanting to make my own raw crackers. I have several recipes (and a dehydrator now), I just haven't taken the time to get busy experimenting!

							i made raw crackers back in the summer when we were doing a high raw diet but I really need to make some more...I want to try and replicate the salsa ones because they were so good

			<content:encoded><![CDATA[<p>This week we have been attempting to eat high raw and have been doing pretty well with it.  For breakfast and lunch yesterday we had some really great juices, squeezed fresh from our new juicer (which I am in love with).  However, by dinner last night we were ready for solid food and I decided to make one of my favorite raw dishes: Raw Polenta with Mushroom Ragout and we had a purple cabbage, yellow tomato and spinach salad dressed with balsamic and olive oil.   The polenta is amazing and very sweet, creamy and garlicky which is great and the mushroom ragout goes really well with it. This recipe came from Ani Phyo&#8217;s Raw Book and I recommend you try it.</p>

							I have never tried polenta... raw or cooked. Well, I did have polenta fries once. I loved them. Is regular polenta much different from the fries version (taste wise)? It's one of those things I'm afraid to try. I'm not sure why. I guess because it's unfamiliar. I am rather curious though.

							Polenta can come in different forms- either soft (kinda like grits) or if you let it set it firms up and you can sautee it or fry it up.

I think raw polenta is even better- basically it's  fresh or frozen corn (if using frozen thaw a bit), salt, pepper, garlic, lemon juice, and raw cashews.  It comes out really sweet and garlicky and has the texture of polenta - which yes is like polenta fries ...except not crispy.

You can do some many great things with polenta I just love it.  My favorite way to use it is to let it set (or you can buy the tubes of it in the grocery store and just cut rounds) and then brown it on both sides and top with a layer of tofu cream cheese, and sundried tomato sauce ....it's delicious!

			<content:encoded><![CDATA[<p>Last Friday our new juicer was to arrive, however, to our disappointment it did not make it to our house (which confuses me as it arrived in the next town over the night before according to the tracking.)  So we had to make the best of our no longer juice fasting weekend and decided to eat a lot of raw dishes and will continue to this week as well.  We both work outside the house so have a juice fast during the week isn’t something that we are able to do and this coming weekend we have dining plans both Saturday and Sunday so we will have to hold off on our juice fast until the following weekend.  Although we will be unable to juice fast this week we will be having juice for breakfast and dinner and eating a raw dish for lunch. </p>

<p>We did not eat all raw this weekend but we did have a lot of meals that were.  The first of which was breakfast on Saturday; we enjoyed (almost) raw breakfast crepe with coconut cashew pudding and bananas. </p>
<p>The raw crepe was from Ani Phyo’s book and is great it is made up of 1.5 cups flax meal, 1 tablespoon coconut oil, 1/8 cup water, ¼ cup agave and a pinch of salt.  I topped these with Ani’s coconut cashew pudding which was super easy to make all you have to do is blend 2 cups cashews, 1.5 cups water, ½ cup shredded coconut, and ½ cup agave. I then placed sliced bananas on top of this and drizzled with maple rice syrup.  It was delicious.</p>

<p>The Maple Rice Nectar Came from <a href="http://www.suzannes-specialties.com/products/process.shtml">Suzanne&#8217;s Specialities</a> which has a variety of all natural, vegan and organic sweetners.  I have always loved the ricemellow &#8211; being a fan of fluffernutter as a child it was great to find something similar and vegan.  However my favorite product of Suzanne&#8217;s that I have tired so far is the Maple Rice Nectar- it is sweet and delicious and when you are out of maple syrup it is a great alternative- mind you it doens&#8217;t taste the same but it is very yummy.</p>
<p>On Sunday morning we enjoyed the remaining coconut cashew pudding in the form of a parfait- I layered sliced strawberries coconut cashew pudding and  <a href="http://www.feedgranola.com/">Feed Bittersweet-ness Granola.</a>  This granola is great we also received a few other varieties and have used them on top of yogurts, with soy milk and just a handful as a quick yummy snack.  Most of their granola is vegan and I was actually sent one with honey in it but I am putting it in a care package for a friend because I&#8217;m sure she&#8217;ll enjoy this granola as much as my husband and I do.</p>

<p>Sunday dinner was (almost) raw tacos in honor of National Taco Day (actually I didn’t plan it that way it just happened).  The only none raw item was our sprouted tortillas.   The tacos were made up of Ani Phyo’s nut meat, baja cheese, red pepper corn salsa and some shredded purple cabbage.  I really would have liked to put some avocado on as well but mine weren’t ripe enough.  I have to say I didn’t love the “meat”, “cheese” and salsa on their own but all together the flavors were wonderful. I can’t wait to make more raw eats and juices this week. </p>

<p>After months and months of debating on whether we should get a juicer or not I finally decided it was time. After checking reviews I decided to go with the <span id="btAsinTitle"><a href="http://www.amazon.com/Breville-BJE200XL-700-Watt-Compact-Fountain/dp/B000MDHH06/ref=cm_cr-mr-title">Breville BJE200XL 700-Watt Compact Juice Fountain</a> . I am so excited.  It comes on Friday and I can&#8217;t wait to start using it.  </span></p>

							My favourite juice recipe is:

- juice from one pomegranate
- juice from one mango
- juice from two peaches
- juice from one yellow apple

juice them together for a surprising tropical taste. The apple really keeps it all together. You can add a little water if it's too thick.

							A good recipe for fruit pulp is:

- 4 cups pulp (any flavour)
- 1/2 - 1/3 cup juice (any flavour)

mix the two ingredients together and let sit until thick. Then either shape or place in metal molds and bake until dried and chewy at 250-300 in the oven. Once dehydrated, you have a fruit jerky that is delicious!

							Peach Strawberry Banana Smoothie

Juice 2-3 peaches.

In a blender add the peach juice, 1/2 a bag of frozen strawberries (self-frozen or store) and 1 peeled banana broke into pieces.

Blend until smooth starting with ice breaker or similar mode on your blender then moving to grate and blend.

Pour into glasses and garnish with fresh strawberries, peach slices or banana slices. Or use a skewer to make a fruit kebab to serve along with it. Delicious! :)

These salad dressing is delicious, raw, no added sugars and only 5 calories a serving! 							I tried the salsa and relish but have never tried the salad dressings. The flavors sound so delicious, and I love that they're raw and so low calorie.

							I've been wanting to try these! Zukay sent me some salsa and relish awhile back and both were so, so good! Unfortunately, my Whole Foods (the only health food store in these parts) doesn't carry Zukay. :-(
